The maintenance of a high standard of cleanliness and hygiene in all areas of the premises is extremely important. Customers will expect and deserve this and the Environmental Helath Officers will demand it. Unclean premises and equipment willbe home to a large amount of bacteria, and waste food will attract animals, rodents and insects.
Systematic cleaning routines will cut down the risk of slips, food poisoning, and accidents in the workplace. Encourage your staff in 'Good Housekeeping'. Train and enforce a 'clean as you go' policy. Spillages and breakages should be dealt with immediately. Waste food removed from surfaces to ensure no cross contamination and that cramped or dirty surfaces arise.
Cleaning equipment should be fit for purpose and items such as mops, buckets and brushes etc. should not be left lying around when not in use. Remember to have clean premises the equipment too must be kept clean. After each use, it should be cleaned and disinfected before being put away.
